Diabetic Diet: Vegetarian/Desserts, Bakes Apples with Raisins

In this day and age with so much information available on the Internet in regards to cooking and recipes, it seems as if everything is always a bit more complicated and “flashy” than it should necessarily be. Not that this is a bad thing, but this recipe right here is a perfect example of how something so simple and easy can be so incredibly delicious as well.
Prep time: 20-25 minutes
Serves: 2
Ingredients:
- Two apples
- One tablespoon of raisins
- Orange juice
- A pinch of ground cinnamon
- Optional: Low-fat, sugar-free vanilla ice cream
Directions:
- Peel and core the apples.
- Coat with orange juice on the outer surface and stuff with raisins.
- Sprinkle on the cinnamon.
- Preheat the oven to 350 degrees.
- Place the apples in Pyrex baking cups and bake for about 25-30 minutes, or until a fork pierces the surface easily.
- Serve them warm (optional: with low-fat, sugar-free vanilla ice cream) or cold — they’re equally delicious either way!
